 Ice Cream or any flavour of ice cream is quite easy and straight 
forward to make. The one challenge is how to make ice cream without an 
ice cream maker. On this page, I will give details of how you can 
successfully make some Vanilla Ice Cream in the comfort of your home.

Vanilla Ice Cream without Ice Cream Maker [Video]

This is just one method. I will be sharing other methods and flavours 
soon so stay tuned.
Ingredients

For 5 big scoops of vanilla ice cream, you will need:

500mls fresh milk (not evaporated milk)
    250mls whipping cream
    6 egg yolks
    60g sugar
    2 tablespoons vanilla extract or 1 vanilla pod

All these ingredients can be purchased from supermarkets all over the 
world. If you are in Nigeria, look for them in big department stores 
like Shoprite.
For decorating the ice cream

Honey
    Caramel
    Fruits

Utensils and Equipment

Freezer
    2 Bowls: 1 should be big enough to accommodate the ice cream 
mixture, the other should be big enough to accommodate the first bowl.
    Spatula
    Pot
    Ice cream spoon (optional)

Before you make the Vanilla Ice Cream

Make a large quantity of ice cubes. This will be used in cooling 
down the ice cream mixture in Step 8 below. I usually make at least 30 
ice cubes for this.

If you will be using a vanilla pod, cut it open by slicing along it 
to expose the seeds.

Break the eggs and separate the yolk from the egg whites. For ice 
cream, we need only the egg yolks.

Directions for Vanilla Ice Cream

Pour the fresh milk and the whipping cream into a sizeable pot.

Add the vanilla extract. If you are using a vanilla pod, add 
everything (seeds and fibre) to the milk and whipping cream in the pot.

Start cooking on medium heat.

While waiting for that to boil, whisk the egg yolks very well. Add 
the sugar and mix well.

Once the contents of the pot start to boil, reduce the heat to very 
low. If you added vanilla pods, remove the fibre from the milk at this 
time.

Once you see that the milk is no longer foaming so much (due to the 
reduced heat), slowly add the egg yolks to the milk, whipping cream and 
vanilla mixture. Stir till well incorporated.

Increase the heat to medium and stir continuously till you notice 
the solution thickening. This should take about 10 minutes.

Once you are happy, place the ice cubes into the big bowl and add 
some water to them. Pour the ice cream mixture into the smaller bowl and
 place this bowl into the ice water bath. Stir the ice cream mixture 
continuously (with a spatula) till it cools down completely. You may 
need to watch the video below to see how I did this.

Place the bowl containing the ice cream mixture in the freezer. 
After 30 minutes, bring it out, stir very well with a spatula and place 
it back for another half an hour. Then bring it out and stir again. 
Repeat the process till a creamy solid is formed. It is important to 
stir very often because this prevents ice from forming in the ice cream.
 Depending on your freezer, this process takes between 3 and 5 hours.

Once you are happy with the texture of the ice cream, serve and 
decorate with honey, caramel and/or fruits.

If you have any left overs, put in a container, cover and place in 
your freezer till whenever. When you take it out of the freezer, it may 
appear rock solid unlike the ice cream purchased in the shops. All you 
have to do is leave it on your kitchen counter for 5 to 7 minutes or 
till it softens to ice cream texture before serving.<br />

1 teaspoon salt<br>
1 teaspoon onion powder<br>

1 teaspoon paprika<br>

½ teaspoon pepper<br>
½ teaspoon cayenne pepper, adjust to your taste Garnish lemon wedge<br><br><br><br></p>

<p dir="ltr">(1) Mix milk, vinegar and mustard and let set for 15 minutes. This will make a mustardy, butter milky dressing to coat the fish.</p>

<p dir="ltr">(3) Dip fish fillets in the milk mixture and then in the cornbread mixture.</p>

<p dir="ltr">(5) Place fillets on prepared pan and  place pan under broiler 4 inches from heat.</p>
<p dir="ltr">(6) Broil for 4 minutes per side or until fish flakes easily with a fork.</p>

<li>Using a coarse grater, grate the frozen butter into the bowl with 
the salt and flour and mix gently. No need to incorporate the butter and

<li>Mix all of the ingredients together using a fork or a whisk.</li>
<li>Gather the dough and turn it out onto a floured work surface.</li>
<li>Using the heel of your hand, press down onto the surface. Don't 
knead. Just use your hands to press and spread so that the butter is 
more incorporated into the flour.</li>
<li>Pat the dough into a ball. Wrap it with plastic and freeze for 20 minutes.</li>
<li>Roll the dough on a floured surface into a rectangle that is 1/2 inch thick.</li>
<li>Fold the dough into thirds, and then fold that in half.</li>
<li>Roll the dough again into a rectangle.</li>
<li>Repeat the folding and rolling one more time.</li>
<li>Fold the dough as directed above, wrap it in plastic, and freeze the dough for another 20 minutes.</li>
<li>Repeat two more cycles of rolling, folding and freezing.</li>
<li>Now the dough can be used just as you would any other puff pastry.</li>

get his attention. He thought the dough was “slimy and gross” but he 
loved picking his own toppings, and the finished product was “awesome”.<br />

 I made two batches of dough, four pizzas in all, with varied toppings.

Making the Pizza Dough</h4>
<b>1</b>  In the large bowl of a heavy duty electric mixer (such as a
 Kitchen Aid), add the warm water.  Sprinkle on the yeast and let sit 
for 5 minutes until the yeast is dissolved.  Stir to dissolve completely
 if needed at the end of 5 minutes.<br />

<b>2</b> Attach a mixing paddle to the mixer.  Mix in the olive oil, 
flour, salt and sugar on low speed for about a minute.  Remove the 
mixing paddle and replace with a dough hook.  Knead using the mixer and 
dough hook, on low to medium speed, until the dough is smooth and 
elastic, about 10 minutes.  If you don't have a mixer, you can mix and 
knead by hand. If the dough seems a little too wet, sprinkle on a bit 
more flour.<br />

<b>3</b> Place ball of dough in a bowl that has been coated lightly with
 olive oil.  Turn the dough around in the bowl so that it gets coated 
with the oil.  Cover with plastic wrap.  Let sit in a warm place 
(75-85°F) until it doubles in size, about 1 to 1 1/2 hours (or several 
hours longer, a longer rise will improve the flavor).  If you don't have
 a warm spot in the house you can heat the oven to 150 degrees, and then
 turn off the oven.  Let the oven cool till it is just a little warm, 
then place the bowl of dough in this warmed oven to rise. <br />
At this point, if you want to make ahead, you can freeze the dough in an airtight container for up to two weeks.<br />
<h4>
Preparing the Pizzas</h4>
<b>1</b> Place a pizza stone on a rack in the lower third of your 
oven.  Preheat the oven to 450°F for at least 30 minutes, preferably an 
hour.<br />
<b>2</b> Remove the plastic cover from the dough and punch the dough 
down so it deflates a bit.  Divide the dough in half.  Form two round 
balls of dough.  Place each in its own bowl, cover with plastic and let 
sit for 10 minutes.<br />
<b>3</b> Prepare your desired toppings.  Note that you are not going 
to want to load up each pizza with a lot of toppings as the crust will 
end up not crisp that way.  About a third a cup each of tomato sauce and
 cheese would be sufficient for one pizza.  One to two mushrooms thinly 
sliced will cover a pizza.<br />

<b>4</b> Working one ball of dough at a time, take one ball of dough 
and flatten it with your hands on a slightly floured work surface.  
Starting at the center and working outwards, use your fingertips to 
press the dough to 1/2-inch thick.  Turn and stretch the dough until it 
will not stretch further.  Let the dough relax 5 minutes and then 
continue to stretch it until it reaches the desired diameter - 10 to 12 
inches.  Use your palm to flatten the edge of the dough where it is 
thicker.  You can pinch the very edges if you want to form a lip.<br />

<b>5</b> Brush the top of the dough with olive oil (to prevent it 
from getting soggy from the toppings).  Use your finger tips to press 
down and make dents along the surface of the dough to prevent bubbling. 
 Let rest another 5 minutes.  <br />
Repeat with the second ball of dough.<br />

 corn meal.  Transfer one prepared flattened dough to the pizza peel.  
If the dough has lost its shape in the transfer, lightly shape it to the
 desired dimensions.<br />

<b>8</b> Sprinkle some cornmeal on the baking stone in the oven 
(watch your hands, the oven is hot!).  Gently shake the peel to see if 
the dough will easily slide, if not, gently lift up the edges of the 
pizza and add a bit more cornmeal.  Slide the pizza off of the peel and 
on to the baking stone in the oven.  Bake pizza one at a time until the 
crust is browned and the cheese is golden, about 10-15 minutes.  If you 
want, toward the end of the cooking time you can sprinkle on a little 
more cheese.</div>
